Cucumber Salad

This is a wonderful summer salad that we keep in the refrigerator for snacking. Quick and easy to make. Just be sure you let the salad sit for at least an hour. We've gotten overeager and forgot that the vinegar needs to do its thing. the zippiness subsides during the one hour wait. Super simple, super delicious.

Ingredients
  • 3 Cucumbers (Partially peeled and sliced)
  • 1 Small Sweet Onion (or Red Onion, sliced thin)
  • 3/4 cup Sugar
  • 1/2 cup White Vinegar
  • 1/2 cup water
  • 3 tbsp Fresh Dill (Chopped)
Instructions
  1. Combine Sugar, Vinegar and Water in a separate bowl and mix well. Stir until most of the sugar is dissolved.
  2. In a medium bowl with a lid, toss the cucumber slices, onion and fresh dill until evenly disbursed.
  3. Pour the vinegar and sugar over the cucumbers. Cover and let sit for at least one hour.
