Did you know that bakers find ways to use lots of a single recipe in many forms? It saves time, mental energy and ingredients.
This crispy sweet topping was a go-to for my bakery for a lot of fruit pies and fruit crisps. (Cobblers are too moist for this crisp topping; it will sink down into the filling before it gets a chance to get nice and crispy on top.)
The hint of cinnamon actually works with almost any fruit, especially berries and peaches. You can leave out the cinnamon, of course, if you want just crispy buttery sweetness on top.
(Thanks to Martha Stewart for the origins of this recipe!)
Remember, you're the captain now! :)
Place softened butter, sugar and cinnamon in you mixer's bowl.
With the paddle attachment, turn mixer on medium speed and cream until light and fluffy.
In a separate bowl, combine the remaining dry ingredients. Add this to the creamed butter and sugar.
Mix on slow until all ingredients are just combined. Be careful not to overmix, you should have some large clumps and some smaller pieces.
Add to top off a crisp or fruit pie, or store in a covered container until needed.
