Please don’t make me put together a whole cake just because I want one slice! Just make my little bit of cake the best chocolate mug cake around. Is that too much to ask?

This mug cake gives you about a slice of delicious chocolate cake, and fits into a normal mug. Note that it doesn’t call for an egg. You won’t miss it in this little cake. You’ll just get great, chocolatey flavors. I did kick the chocolate up a notch with a smidgen of instant coffee, a go-to for enhancing chocolate in many pastries.

The chocolate chips give this Chocolate Mug Cake a gooey plus, but you can omit them if you want.

Microwaving is the trickiest part of making any mug cake. For my 1000 watt microwave it was perfect at 1 minute. When you’re experimenting, err on the shorter side of timing; this also does pretty well as a chocolate lava cake, so still very edible. Overcooked cake is not as good.

I like to eat this cake with a scoop of vanilla ice cream melting on top. Heavenly! And once it’s gone, there’s no more temptation. Until you make another easy Chocolate Mug Cake…

Instructions

  1. Combine all the dry ingredients. If using the mug you will cook it in, be sure to stir all the way to the bottom and blend everything completely. It's easy to miss the corners when you're mixing. Otherwise, use a small bowl.
  2. Add the wet ingredients all at once, again stirring all the way to the bottom to mix completely.

    Stir vigorously for one minute.

  3. Sprinkle the chocolate chips evenly on top of the batter.
  4. Microwave immediately for one minute.
  5. Let cool for 1 minute.

    Enjoy!
